I tried running with the fan in Auto, but it just seems to run at low speed. I thought it would be like the climate control in the car, ie. the fan speed would go up and down depending on the demand.

I thought if the temp is set to 22, but the room temp is only 19, then it would run at high fan speed, and then reduce speed as room temp increased toward the set temp. But it does nothing except run at fairly low speed. So what is actually automatic with Auto setting?

I have no first hand knowledge on the Mitsubishi machines but generally it would work the way you propose, with fan speed according to demand. The speed control usually is very conservative to keep noise at a minimum.
That is  a reason to take manual control unless the placement of the indoor unit is sound sensitive. I would run it manually kepping a balancing between noise and even temperature spread.
